
Steak lovers, rejoice! A brand-new steakhouse, The Merchant Steakhouse, is opening to Glasgow on Friday, April 28, taking over the former Canteen 58 on Ingram Street. The spot is dedicated to modern Scottish cuisine, serving top-quality dry-aged Scotch beef, premium wines and signature cocktails giving a nod to modern Scotland.
The split-level venue serves locally sourced and freshly prepared dishes, with a focus on its Scottish roots. The Merchant Steakhouse is also working with ABR Fine Foods to source the best beef from Millers of Speyside, straight from the Highlands. Serving only eight premium cuts of meat with 28 and 45 day dry-aged Miller Aberdeen Angus, the restaurant is set to become a top destination for meat lovers.
The kitchen will be reigned by executive Chef William Lee, having worked in Michelin-starred and Rosette venues. The craft menu has been designed to reflect Scottish flair and a modern perspective on dining, with gourmet steaks, seasonal flavours and memorable dining experiences.
Flavour is high on the menu, with a custom built, Argentinian-inspired Parrilla grill is there to lock in extra layers of smoky and juicy flavours to their meats. Each premium cut is carefully chosen bt The Merchant’s chefs to be grilled over flaming hot oak charcoals, creating that irresistible and buttery end product.
The available cuts include ribeye, fillet, porterhouse, bavette and more, prepared to the guest’s liking whether they like them blue, kicking and screaming or well-done. In addition to premium steaks and Scottish seafood, the opulent venue will also offer a vegetarian food menu, with Roast Cauliflower Steak and Garden Pea Risotto, or starters like Creamed Cauliflower and Mull Cheddar Soup, Ash-baked Heritage Beetroot Salad all announced before opening.
The Merchant Steakhouse is bringing a truly Scottish interior, with features from Mark Hogarth, Creative Director at Harris Tweed throughout, so it looks like the place went through a complete transformation.
The new spot comes from Bow Hospitality, the team behind popular venues Mezcal and Saki Maki. The Merchant Steakhouse is also expected to bring 30 full-time and part-time jobs to the area, with a capacity of 80 positions.
