Trust By Modou is Chef Modou Diagne’s second Glasgow venture, after facing immense success at 111 By Modou. The concept’s motto states “no previews, no descriptions, just trust”, inviting foodies to embrace the unknown.
Now open in Glasgow’s Finnieston, Trust By Modou offers ever-changing dishes, with a unique tasting experience tailored to the guest’s dietary requirements. Chef Modou and his team deliver a five-course meal for just £30 per person, “built for repeat visits and returning fans”. Plus, curated drinks pairings are priced at £28pp.
Chef Modou Diagne’s story is one of humble beginnings, emigrating from Senegal to Glasgow at the age on 19 with only £200 in his pocket and a determination to look for opportunities. Starting as a kitchen porter, Modou rose to Head Chef, mentored by Chef Nico Simeone at Sic By Nico. Showing a story of inspiration and hope, the restaurant will incorporate the storytelling aspect into its dishes.
Chef Modou Diagne said: “TRUST is designed to be about more than just exceptional food; it’s fundamentally about fostering connection, delivering delightful surprises, and giving our guests a compelling reason to return.
We aim for them to come back not merely for a specific dish, but for the unique feeling and experience we provide. My aspiration is for people to walk through our doors, release any preconceptions or need for control, and simply savor whatever we have cooked and prepared for them at that very moment.”
