There’s nothing quite like a fluffy bagel baked to perfection, however some would say this is hard to come by in Glasgow. Luckily, bagel baker, Matt Harris, saw the gap in Glasgow’s foodie scene and launched his very own bagel brand last month. And it’s quite the belter!
What began as baking bagels for friends and family to pass the time became a bagel business bringing wonderful, freshly baked rings of joy to the people of Glasgow. Holy Moly, based in Glasgow’s Southside, has baked over 2,000 ‘belter bagels’ and is currently sold out for the next three weeks!
When you’re able to order from Holy Moly, you can select from a range of bagel flavours such as plain; Maldon sea salt; everything seasoning (Holy Moly’s signature blend of garlic, onion, sea salt, sesame seeds and poppy seeds); sesame seed; and poppy seed. Better yet, the southside baker even serves up caramelised onion bagels where the onions are cooked low and slow for over four hours to create an incredible taste.
But that’s not all. Holy Moly has created a bagel flavour that is the talk of Glasgow (and possibly beyond the city) which is black garlic whisky smoked salt. Holy moly indeed! The bagel maker uses salt made by Hawkhead Whisky Smoked to produce bagels bursting with an umami flavour.
You can also order a selection of cream cheese to compliment your Holy Moly bagel, featuring flavours such as wild garlic; sundried tomato and basil; lemon and dill; gochujang and honey; Big Mac schmear; spring onion; and honey and walnut. If that’s not enough you can even add some pickles or extra seasoning to create the ultimate bagel. Matt Harris even posts plenty of inspo for how to serve your bagel from a plain classic cream cheese filling to beef brisket, Swiss cheese, sauerkraut, Dijon mustard and pickles.
